I love to make traditional foods into seasonal foods, and obviously pumpkin is a perfect way to make foods “taste like fall”. As I was out on
my long run this weekend, I came up with this little recipe, and I’m fairly certain I ran faster because I wanted to try it out!
Ingredients
- Bread
- 2 eggs
- 1-2 tsp vanilla extract (optional)
- 1 tsp cinnamon
- 1.5 tsp pumpkin spice
- 0.5 tsp nutmeg
- 1/4 cup pumpkin puree (optional)


It was delicious! Seriously mouthwatering, and I’m fairly certain it’s the motivation I need to finish all my training runs earlier!

It’s especially delicious paired with pumpkin spice coffee:) Do yourself a huge favor and make this as soon as possible!
