I’m a huge fan of quinoa, and am always looking for new things to mix with it for meals. I’m also a huge fan of cooking on Sunday evening and making enough to last through most of the week. It makes week nights much less stressful, and I can ensure that I’ll still get a great meal. While wandering around the grocery store, I started grabbing some vegetables and decided to throw them all together with some quinoa for the week. This is really easy, took almost no time to prepare, and will be great to bring for lunches all week!

Here’s what I included:
- 1/2 pint tomato
- 3/4 can black beans
- 3/4 can northern beans
- 2 large handfuls spinach, cut into pieces
- 1 cup corn
- 3/5 of an orange pepper
- 1 cup dry quinoa
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- salt
Here’s what I did:
- put all vegetables & beans in a frying pan with 1.5 tablespoons olive oil and simmer on medium, stirring occasionally. Salt to taste.
- put 1 cup dry quinoa and 1.5 cups water into rice cooker and cook
- mix quinoa with 2 tablespoons lemon juice, 1.5 tablespoons olive oil, and salt
- Mix veggies & beans with the quinoa and refrigerate!

Like I said, this took almost no time to cook, and is delicious! I love the mixture of quinoa, beans, and veggies, and I love the healthiness of this dish!

i loveee quinoa but for some reason I can not get into beans. just thinking about them doesn’t sit well with my stomach. your end results look yummy though! (:
